Bread & Butter Pudding

Ingredients
  • 4 large Sunny Queen Farm eggs
  • 6 thick slices of white bread (day old is fine) cut from rustic loaf
  • 2 or 3 tablespoons Butter
  • Cinnamon
  • 3 cups milk
  • ½ cup of sugar
  • 2 teaspoons of vanilla essence
  • A handful of sultanas
Method
  • Step 1.

    Preheat oven to 160°

  • Step 2.

    Butter the bread and lightly butter an oven proof baking dish

  • Step 3.

    Tear the bread in rough halves and layer on the dish, scatter with sultanas & sprinkle with cinnamon then layer the remaining bread on top (don’t put sultanas on top as they will burn)

  • Step 4.

    Mix eggs, sugar, milk, and vanilla essence with a fork or whisk until combined

  • Step 5.

    Pour onto bread & soak, pushing down gently so all bread is soaked and allow to sit for 10 minutes.

  • Step 6.

    Bake at 160° for 45 minutes

  • Step 7.

    Allow to sit briefly, then serve hot or cold
