Niçoise Salad

Delicious French salad

Ingredients
  • 3 large Sunny Queen Farms eggs
  • 2 baby gem or cos lettuce washed and dried
  • 4 vine ripened tomatoes cut into wedges
  • 200g green beans, freshly blanched
  • 1 tin (about 300g) good quality tuna in olive oil
  • ½ red onion
  • 1 Lebanese cucumber
  • 16-20 black olives
  • Handful Flat leaf parsley – leaves picked
  • Dressing - 2 tablespoon red wine vinegar
  • ½ teaspoon of Dijon mustard
  • 100ml extra virgin olive oil
  • 2 small cloves of garlic peeled and crushed
  • Salt and pepper to season
Method
  • Step 1.

    Cover eggs with water in a saucepan and bring to the boil, then simmer for 4 minutes

  • Step 2.

    Run them under cold water to stop the cooking, then peel and cut into halves

  • Step 3.

    Slice red onion very fine

  • Step 4.

    Cut cucumber in half lengthways and slice 5mm thick

  • Step 5.

    Drain the tuna

  • Step 6.

    Start layering the salad on a plate or platter – begin with lettuce

  • Step 7.

    Add the cucumber, red onion, tomatoes & tuna

  • Step 8.

    To blanch the beans - boil a saucepan of water, add a pinch of salt and cook the beans for less than a minute and drain

  • Step 9.

    Add beans and eggs to the salad

  • Step 10.

    Scatter with parsley leaves and black olives then drizzle with dressing

  • Step 11.

    Dressing – mix all ingredients & stir or shake to combine

  • Step 12.

    Serve immediately
