  • 2 x 4 packs Sunny Queen Peeled Hard Boiled Eggs
  • 5 tbsp mayonnaise
  • 1 tbsp Dijon mustard
  • 2 tbsp white wine vinegar
  • Squeeze of fresh lemon juice
  • 1 tbsp extra virgin olive oil
  • Salt and pepper

Method

A delicious, quick and easy meal using Sunny Queen Farms Free Range Peeled Hard Boiled Eggs!

  1. Slice 8 Sunny Queen Peeled Hard Boiled Eggs in half lengthwise; remove yolks and place in a mixing bowl.
  2. Mash the egg yolks with a fork.
  3. Add 5 tbsp mayonnaise, 1 tbsp Dijon mustard, 2 tbsp white wine vinegar, squeeze of fresh lemon juice, and 1 tbsp extra virgin olive oil; mix until smooth.
  4. Season with salt and pepper to taste.
  5. Stir in fresh chopped herbs (parsley, dill, and chives).
  6. Spoon or pipe the yolk mixture back into the egg white halves.
  7. Arrange on a platter and garnish with additional herbs if desired.
  8. Serve and enjoy!
