A delicious, quick and easy meal using Sunny Queen Farms Free Range Peeled Hard Boiled Eggs!
- Slice 8 Sunny Queen Peeled Hard Boiled Eggs in half lengthwise; remove yolks and place in a mixing bowl.
- Mash the egg yolks with a fork.
- Add 5 tbsp mayonnaise, 1 tbsp Dijon mustard, 2 tbsp white wine vinegar, squeeze of fresh lemon juice, and 1 tbsp extra virgin olive oil; mix until smooth.
- Season with salt and pepper to taste.
- Stir in fresh chopped herbs (parsley, dill, and chives).
- Spoon or pipe the yolk mixture back into the egg white halves.
- Arrange on a platter and garnish with additional herbs if desired.
- Serve and enjoy!
